What started out as a joke between friends, the Valentine Ice Cream collection has become one of our most famous and eagerly awaited events. Aimed towards the unattached during the month of Romance, people can now find a Matinong Boyfriend or Girlfriend, seek Closure, or confront one’s Unresolved Issues just by visiting our shop.
This year’s Valentine’s 2021 Ice Cream Collection is as follows:
Matinong Boyfriend (Black & White)
Matinong Boyfriend is aimed for women and has a feminine energy, characterized by refined technique & a focus towards balance and harmony. This year we made a White Cocoa Ice Cream, made by steeping a cream base in roasted cocoa nibs for 2 days. The Ice Cream takes on a rich cocoa flavor while looking like a scoop of Vanilla which is a surprise to the eater when they taste it.
To pair with this, we made a Blueberry Sorbet ribbon which takes on a rich dark color (blackberries turn bright purple when made into a sorbet, ironically enough). To round it out we add almond praline crumble for a pop of texture and sweetness. The flavor is unusual yet harmonious, like the rush of a new romance.
Matinong Girlfriend (Mixed Nut Medley)
The theme of Matinong Girlfriend, aimed towards men and has a more masculine energy, is best encapsulated by the phrase “Accessible Excess”. Something over the top, but still fun and delicious. This year we decided to go with a Nut Butter Ice Cream, and instead of choosing which nut to use, we decided to use all of them.
A mix of cashews, walnuts, pecans, almonds, pili nuts, macadamia nuts, brazil nuts and hazelnuts all roasted and blended into a smooth butter and blended into an Ice Cream base. We add ribbons of thick butter caramel to the Nut Ice Cream and garnish it with Swedish-style candied nuts, a technique where we use egg whites and sugar to make a light and crunchy candy coating using the same mixed nut blend. The flavor is relatable and comfortable with enough spark to keep things interesting, like a strong long-term relationship.
Closure (Kashmiri Pink Chai)
Meant to embody wellness and inner peace,The smooth, chunkless Tea-Infused Ice Cream went all the way to India for inspiration. Also known as Noon Chai, this tea originated in the Kashmir region of India. The rich pink color uses no food coloring and is instead obtained by adding a pinch of baking soda to green tea leaves and boiling for a long period of time. It is finished by adding milk and salt for a savory tea.
We make our version by boiling green tea leaves in a little baking soda to achieve that intense pink color then add it to a cream base and infuse the tea overnight with cardamom, clove, cinnamon and star anise. To finish we mix in sugar to turn it into a sweet dessert. This unique Ice Cream takes you around the world and brings you back to your center.
Unresolved Issues (Ampalaya Sorbet)
The only Valentine flavor that never changes year after year, This Sorbet is made from fresh ampalaya and turned into a bitter sorbet that is mixed with sugar which sweetens it but you can still feel the bitterness coming through, like a long held grudge that it refuses to let go of. Never changing, never moving forward, always staying the same. Garnished with candied ampalaya to make it even more bitter.
