Jolly Heart Mate Canola Oil Dinagyang Fiesta with Chef Donita

Showcasing one of the most-loved dishes in the region, Jolly Heart Mate Canola Oil brought celebrity chef ambassador Donita Rose to Iloilo City last Dinagyang to recreate and add heart-healthy twist to a favorite recipe - Chicken Binakol.
The bubbly chef showed her culinary skills with her tasty version of the tasty chicken soup at Robinson’s Place Iloilo during the festival. Chef Donita's version called for the addition of coconut milk (gata) on top of the original recipe - it's like tinola but somewhat sweeter with the additional of coconut juice and meat.
“Ilonggos are known to be serious about their food, understand their ingredients, and are fussy with preparation." says Chef Donita. She mentioned that when she made her fusion recipe for Binakol, she made it a point not to overdo it to avoid "con-fusion" of the resulting flavors from the original.  "And with Jolly Heart Mate Canola Oil, everybody can enjoy delicious food while keeping it healthy because of its low bad fat content,” shared by Chef Donita.

The Jolly Chicken Binakol still had the binakol flair and flavor we are all accustomed to. But with the additional of another familiar flavor (coconut milk), it created another taste dimension - rich and creamy flavor complimented with the sweetness of the juice and a gentle spice of the ginger and lemongrass. Chef Donita later revealed that she took inspiration from a Thai chicken soup recipe - Tom Kha Gai, when was experimenting on her fusion dish. Indeed with a local dish with a delicious international twist!
